What is Thai parboiled rice?
Parboiled rice is rice that has been soaked, steamed and dried in its husk before milling. The process moves nutrients from the bran into the grain, hardens the kernel so fewer grains break, and gives the rice a golden colour. Cooked parboiled rice stays firm and separate, even when held warm for hours or cooked in sauces.

How parboiling works
Paddy is first soaked in water, then steamed so the starch inside the grain gelatinises, and then dried before milling. The hardened grain breaks less during milling, which is why parboiled rice has a lower broken content and a higher milling yield.
For buyers this means rice that is forgiving to cook, stores well in warm climates and holds its shape in dishes such as jollof rice, which is why parboiled rice is the staple choice of West African importers and caterers.

What does 5% sortexed parboiled rice mean?
It means the parboiled rice has no more than 5% broken kernels and has been colour sorted by optical machines, which remove discoloured and damaged grains. It is the premium grade of parboiled rice for export.
