Arborio or Carnaroli?
Arborio is the most widely known risotto rice. It releases plenty of starch for a creamy result and is easy to cook in volume. Carnaroli has a slightly longer grain that holds its shape better under long cooking, which is why many restaurant kitchens prefer it.

What is the difference between Arborio and Carnaroli rice?
Both are medium grain risotto rices. Arborio releases more starch and is easier to cook in volume, while Carnaroli holds its shape better and gives a slightly firmer bite.
